  1. Meat should already be cut into 2-3 cm cubes. Using kitchen paper, dry it.
  2. Clean the coriander and lemon.
  3. Garlic and onion should be peeled and chopped finely.
  4. Combine these ingredients in a food processor with the lemon juice and a portion of the zest, as well as the coriander leaves.
  5. Blend in the spices, salt, and oil until you have a paste, but not all of the spices are diluted. If you don’t have a food processor, pound the cumin and saffron together in a mortar and set aside the garlic; finely slice the onion and coriander with a knife if you don’t have one.
  6. Pour the marinade over the meat in a big zip lock freezer bag. Add more oil if it’s too thick. Close securely and massage the meat to evenly impregnate it with the liquid, expelling as much air as possible. Refrigerate for at least 8 hours, preferably 12 hours.
  7. Prepare the skewers with wooden or metal skewers before grilling. Cook, turning them over, on a very hot griddle until nicely browned. It’s best to soak the wooden skewers in water for half an hour before cooking them on the grill or over an open fire.
