  1. Melt butter in a large pot over medium heat. Increase the heat to high and add the taro once the butter has completely melted and the foam has subsided.
  2. Cook, stirring constantly while it is boiling, until the taro becomes slightly transparent, starts to color around the edges, and reduces in volume to a soft, starchy ball, about 5 minutes.
  3. Scrape any starchy bits from the bottom of the saucepan with a wooden spoon or spatula before adding the cream, coconut milk, and sugar. Bring to a low simmer, then turn off the heat. Cook, covered, for 20 minutes or until taro is totally soft.
  4. Transfer the dairy mixture to a blender and blend on high speed for 30 seconds, or until completely smooth.
  5. Pour through a sieve into an airtight container, season with salt to taste, and chill for at least 4 hours until extremely cold.
  6. Transfer ice cream base to ice cream maker and churn according to manufacturer’s directions once it has cooled. Chill the ice cream in an airtight container for at least 6 hours before serving. Allow 5 minutes for the ice cream to soften on the counter before scooping.
