Mole de Olla – Mexican Beef and Vegetable Soup

Mole de olla is a typical Mexican soup. It’s created with xoconostle, squash, zucchini, green beans, maize, potato, chambarete, and aguja meat, all of which are cooked in a guajillo and pasilla chile broth with garlic, onion, and epazote. It’s accompanied by chopped serrano pepper and lemon. The term mole refers to a sauce or a mixture of ingredients.

Mole de Olla is defined as a blend of chili peppers and spices with a distinct flavor, usually hot but with a sweet undertone.

This wonderful delicacy dates back to pre-Hispanic times and is defined by its light or liquid consistency, as opposed to all moles, which are thick.

This is one of the most characteristic dishes of Mexican food, as it is one of the most common stews in fondas and most houses around the country.

Mole de Olla isn’t created with a rich sauce packed with spices like most typical Mexican moles. Instead, this stew is cooked in a vegetable broth with a light chili sauce that gives it a crimson hue and a faint smokey flavor.

To make your Mole de Olla: Pat the meat dry and chop it into bits. Place it in a large saucepan with the onion, garlic, bay leaves, and salt, and bring to a boil, simmering for about 1 hour over medium heat. Any foam that rises to the surface should be skimmed off.

Prepare the vegetables while the meat is cooking: They should be washed and peeled before being cut into portions. Set aside while you make your sauce.

Remove the seeds and membranes from ancho and guajillo chillies by cutting them longwise and discarding the stems. In a small pot, combine the tomatoes, ancho, and guajillo chiles. Bring to a boil, covered with water. Cook until the tomatoes have softened.

Transfer the chilies and cooked tomatoes to a blender, along with the onion, garlic, bay leaves, and oregano, and mix until smooth.

After the meat has been thoroughly cooked. Now toss in all of the vegetables at once, making sure there is enough liquid to cover everything. Simmer until the vegetables are soft, about 15 minutes. Toss in a pinch of salt and remove from the fire, and you’re done! Your Mole de Olla is now complete.

The Mole de Olla is a hearty dinner made with bone-in chunks of meat, vegetables like carrots, chayote, squash, corn, green beans, and xoconostles, and a taste combination of carrots, chayote, squash, corn, green beans, and xoconostles.
