- Cook for 5 minutes, or until a sugar thermometer reads 155 degrees Celsius. Allow to cool to room temperature after removing from the heat.
- Fruit (grapes, cherries, or small pears) should be coated with syrup before being placed in the sugar water.
- Place the grapes or fruit on a wired rack over a sheet pan with a slotted spoon. Allow one hour for the grapes to sit, making sure they are not touching.
- Alternatively, place lollypop sticks into square-grated cake rack holes and leave aside for 30 minutes or until candy is set.
- Place the remaining sugar on a platter and roll the grapes in it one by one. Repeat until all of the grapes have been sugared.
- Allow to sit for an additional hour on a sheet tray.
