  2. Add garlic, cumin, salt, black pepper, roasted peppers, and tomato puree to a blender. Combine on medium for 3 minutes, then add 2 1/2 cups water and blend for another couple of minutes – put aside.
  3. In a skillet, heat the oil and then add the salsa to the blender. Stir and simmer for 15 minutes to allow the spices to absorb the sauce. Remove from the equation.
  4. To soften tortillas, place them one at a time in a heated skillet with 1 1/2 cup oil. Dip each tortilla in the oil first, then in the Ancho Sauce, until all of the tortillas are done.
  5. Roll each tortilla into an enchilada with the queso and onion mixture inside. Serve 2 or 3 enchiladas on a platter with salsa de Chile Ancho on top and more queso and chopped onion on the side.
  6. Serve with cilantro and chopped avocados as a garnish.
