- 6 garlic cloves, minced
- kosher salt and pepper
- 3 tablespoons chopped fresh sage
- 3 tablespoons chopped fresh parsley
- 3 tablespoons chopped fresh rosemary
- 2 1/2 cups chicken or vegetable stock
- 2 large eggs
- a mixture of fresh herbs for sprinkling

- Slice the bread into 1/4″ cubes and set it to dry overnight or about 12-15 hours. (Alternatively, bake the bread for 20 minutes at 200°F on baking pans.)
- Preheat the oven to 350 degrees Fahrenheit and grease a large baking dish. Melt butter in a large skillet over medium heat. Cook, stirring occasionally, until the onion and celery are tender and fragrant, about 8 minutes. Cook for 1 minute more, stirring in the garlic, parsley, sage, thyme, and rosemary. Salt & pepper to taste.
- Toss the bread with the skillet mixture in a large mixing dish. Toss everything together. Whisk together chicken broth and beaten eggs in a medium bowl, then pour over bread mixture. Toss with a sufficient amount of salt and pepper until well-coated.
- Cover the mixture with foil and place it in the prepared baking dish. Bake for 45 minutes, then remove foil and bake for another 15 to 20 minutes, or until bread is brown.
