Tantuni – Turkish Beef Wrap

Tantuni is a classic Turkish street snack made up of thinly diced beef or lamb and a salad wrapped in a special bread called lavash. Tantuni is a spicy dish made with julienne chopped beef or lamb stir-fried in a sac with a touch of cotton oil. It is a Mersin specialty in Turkey.

The tantuni dish is traditionally wrapped in a durum wheat wrap and served with ground sumac and a lemon wedge on the side. Tantuni flavors are claimed to never be the same because each tantuni chef has his unique approach and secret technique for cooking the dish.

The dish is prepared in tantuni tavasi pans that have been specially made for it.

Tantuni meat is pulverized and cooked in salted water before being fried in cotton oil. Following that, the meat is wrapped in lavash bread with chopped onions, sliced, skinless tomato slices, green peppers, and parsley. The finished product is seasoned with pepper, salt, and sometimes additional spices before being wrapped in lavash bread and served.

To produce a good tantuni, the beef should be chopped extremely small. Freeze the beef for a few hours before chopping to make it easier. Chopping semi-frozen meat is a breeze.

Tantuni should also be cooked fast to avoid the meat becoming hard or rubbery. It would be easier to use a pan with a thin bottom, such as a wok pan. You can also use a paella pan, as I do, if you have one. If neither of them are available, any pan with a high temperature can be used.

  • 1 lbs Beef (fat free) diced
  • 1/2 teaspoon Salt
  • Water
  • 1 /2 bunch Parsley finely chopped
  • 1 teaspoon Ground red chilli pepper powder
  • 1 teaspoon Sumac
  • 2 Medium size onions diced
  • 2 Medium size tomatoes diced
  • 2 Sweet green chili peppers center seeds removed and sliced
  • 4 tbsp Cottonseed Oil
  • Lemon juice
  • Cumin

Below is a simple recipe for the most hearty tantuni. The recipe is very simple and you can prepare it in no time. You can as well watch the video that follows later for a step-by-step preparation. This video will guide you to a delicious meal.

  1. Set aside a bowl containing parsley, onion, salt, and sumac.
  2. Boil the beef cubes in their own juice until the color of the beef cubes turns brown.
  3. 4 tablespoons cottonseed oil, heated in a wok over medium heat
  4. In a wok, cook the boiled beef cubes for around 5 minutes. To keep the beef cubes soft, add a splash of water a few times (2 times) when frying them.
  5. Stir in the sliced sweet green chile peppers for approximately 3 minutes.
  6. Stir in the ground red pepper for about two minutes.
  7. Stir in the diced tomatoes for about 5 minutes.
  8. Reduce the heat to low and top the dish with the lavash bread to absorb the juices. Also, for about 30 seconds, keep the lavash bread on top of the dish. Allow it to absorb some of the liquid from the dish.
  9. Place the lavash bread on a plate and remove it from the top of the dish.
  10. Place the cooked meat in the center of the lavash bread and spread it out evenly with a spoon in a stripline pattern from top to bottom.
  11. On top, sprinkle the raw onions, sumac, and parsley mixture.
  12. Make a wrap using the lavash bread. (Don’t forget to shut the roll’s bottom.) Otherwise, all ingredients will be thrown out).
  13. Repeat the process until all of the meat in the wok is done.
  14. Before serving, sprinkle the cumin and squeeze the lemon juice on the rolls. Enjoy!
