- Preheat oven to 230 degrees Fahrenheit.
- Clean the chicken by rinsing it and patting it dry with kitchen paper towels. The drier the chicken is, the crispier the outer skin becomes.
- Season the chicken inside and out with salt and pepper.
- Tie the legs together and tuck the wings behind the bird so they are hidden. Everything will cook evenly if everything is well-tied.
