- The clams should be cooked in the water. Remove the shells and set aside one cup of the cooking liquid.
- Make tiny feathers out of the onion.
- Add the onion to the hot olive oil and cook for 5 minutes before adding the sugar.
- Cook for 15 minutes over low heat, or until the onion is caramelized.
- Serve a little of the cooking water, the mule leg clams, a few drops of apple cider vinegar, and Worcestershire sauce in individual glasses.
