- 1 pound pork or tripe or rumba meat – cut into bite-size cubes
- ½ pound liver (pork) – cut into bite-size cubes
- 4 pieces hotdogs/sausages – cut into small diagonal slices
- 3 tablespoons oil
- 2 cloves garlic (minced)
- 1 medium onion (chopped)
- 1 cup guajillo sauce (2 pasilla peppers, 2 guajillo peppers, salt, pepper, cumin, clove of garlic)
- 2 cups water
- 2 potatoes cut into medium sized cubes
- 2 medium potatoes (cut into cubes)
- 2 medium carrots (cut into cubes)
- 1 ½ – 2 teaspoons salt
- ¼ teaspoon ground pepper
- 1 small red bell pepper
- 1 cup green peas

Below is a recipe for the most hearty pancita. The recipe is very simple and you can prepare it in no time. You can as well watch the video that follows later for a step-by-step preparation. This video will guide you to a delicious meal.
- Rinse the meat after cleaning it with water and vinegar.
- Marinate the meat and liver for at least 10 minutes in calamansi or lemon juice.
- Sauté garlic, fresh herbs, potatoes, and onion in oil in a deep skillet over medium heat until limp and translucent.
- Cook, stirring constantly, until the pork is no longer pink on all sides.
- Remove the seeds and stems from the pasilla and guajillo peppers and boil them for 15 minutes in water to make the guajillo sauce. Drain the water and combine the softened peppers, one garlic clove, salt, pepper, onion, and cumin in a blender. Using a strainer, strain the mixture.
- Pour in the sauce and 1 cup of water, cover, and cook for 15-20 minutes.
- Cook for a few seconds, tossing regularly, until the liver is cooked through.
- The hotdogs, carrots, potatoes, and bell pepper are then added. Season with salt and pepper and add another cup of water. Cover and cook for 15-20 minutes, or until veggies are tender, turning occasionally. Cook for another minute after adding the green peas.
- Serve with rice or toast as a side dish.
