  • 1 onion
  • Vinegar
  • 2 cloves of garlic
  • 4 tablespoons of homemade tomato sauce

  • 1 tablespoon of paprika
  • 1-2 bird’s eye chillies
  • Black pepper
  • Laurel
  • Oregano
  • Extra virgin olive oil
  • Shall

  1. Cut the vegetables into brunoise and slice the garlic.
  2. Clean the gizzards if necessary and season.
  3. Once they are clean, put them in another bowl with a little water and vinegar, let them soak for 15 minutes. After this time, wash and drain them well.
  4. In a saucepan, brown the garlic with the chilli.
  5. Add the vegetables such as onion, leek, pepper, carrot or whatever you’re using as and sauté for 5 minutes.
  6. Add a few tablespoons of tomato and sauté
  7. Spice with oregano and bay leaf
  8. Add the white wine and paprika and let it evaporate
  9. Add the gizzards, cover with water and cook for about 2 hours over low heat
  10. After two hours remove the gizzards, crush the sauce and leave half an hour more with the gizzards inside to reduce and thicken the sauce
  11. Serve on a platter or individually
