  • 1 whole egg
  • 1/4 c. (1/2 stick or 4 tablespoons) salted butter
  • 1/4 c. all-purpose flour
  • 2 1/2 c. whole milk
  • 2 tsp. (heaping) dry mustard, more if desired
  • 1 lb. cheese (such as cheddar, jack and/or fontina), grated
  • 1/2 tsp. salt, more to taste
  • 1/2 tsp. seasoned salt, more to taste
  • 1/2 tsp. ground black pepper
  • cayenne pepper, paprika and/or thyme (optional)

  1. 4 cups dried macaroni, cooked until extremely “al dente” Avoid making the macaroni mushy; it should be firm at all times because it will be baked afterwards.
  2. Preheat the oven to 350 degrees Fahrenheit.
  3. Whisk the egg in a small bowl. Remove from the equation.
  4. Toss in about a teaspoon of salt to the water.
  5. Melt 1/4 cup (1/2 stick or 4 tablespoons) butter in a large saucepan or dutch oven.
  6. Sprinkle 4 tablespoons flour.
  7. Over medium-low heat, whisk the ingredients together until well mixed.
  8. Continue whisking for another 5 minutes to finish the roux.
  9. Pour 2 1/2 cups whole milk into the pot.
  10. Add 2 or 3 teaspoons of dried mustard to the mix.
  11. Cook for 5 minutes after whisking the ingredients together. It will thicken to the point where it resembles cream gravy.
  12. Reduce the heat to low at this point. To get a modest amount of sauce, use a 1/4 cup measure.
  13. Slowly drizzle a small bit of sauce into the beaten egg.
  14. To avoid frying the eggs, start whisking constantly.
  15. Continue to temper it.
  16. Then you pour the tempered egg into the pan and stir it together until everything is well mixed.
  17. Now add all of the grated cheese except about 1/2 cup and mix thoroughly until everything is combined. melted
  18. Turn the heat off.
  19. Add half a teaspoon of salt and half a teaspoon of seasoned salt (better do with your salt your salt to desired taste)
  20. powdered black pepper
  21. Simply add the drained, uncooked macaronimacaroni and stir to combine.
  22. You can serve the macaroni right immediately or transfer it to a buttered baking tray.
  23. Finish by sprinkling the remaining grated cheese over the top of the dish.
  24. Bake for 20 to 25 minutes, or until the cheese is melted.
