- Cook the loroco flowers in water until tender, then set aside to cool.
- Knead the dough in a container, add a little water to soften (about 1/2 cup), and season to taste with salt and spices. Then mix until you have a homogenous paste that is somewhat sticky but consistent.
- Make a medium-thick tortilla out of a small ball of dough, then sprinkle the loroco and chopped cheese evenly across the tortilla.
- Close the tortilla around the filling and roll it into a ball, then pat until you have a tortilla again. Excess filling should be avoided because it will burn if exposed.
- Place it on a hot clay comal or on a Teflon pan that has been coated with oil. Moisten with olive oil if possible.
- Allow each side of the tortilla to cook, turning it over or peeling it off with a spatula to keep it from burning and sticking. It’s natural for cheese to escape from the sides (just like a hot pizza)
- Serve with a thick tomato sauce, well-seasoned guacamole, and a sprinkling of finely diced Salvadoran-style cabbage and carrot after it’s done.
