- In a pot or pan add the pork rinds and 1/2 cup of water. Cook until the cubes begin to melt and the meat is tender (approx. 15 minutes) remove from heat and reserve.
- In a comal, roast the chilies, tomatillos and garlic until they are slightly burnt (except the tomatillos, leave them for a very short time, only slightly brown as it can become bitter). Remove the roasted skin from the chiles with a little water.
- When the chilies are cold. and tomatillos add them to the blender along with the other ingredients 3/4 cup of water.
- Blend until you have a smooth sauce.
- Cook over heat under the pork rind and add the sauce on top, mix until all the pork rinds are covered and cook for 5 minutes.
- Heat the flour tortillas, take a portion of pork rinds and spread it on the tortillas, then form burritos.
- Prepare the burritos you want and enjoy!
