- 1, 15-oz can black beans, drained and rinsed (if you prepare your beans from scratch, use about 2 cups)
- 1 teaspoon ground cumin
- 2 Pasilla de Oaxaca chiles, rehydrated
- 1 teaspoon roasted minced garlic
- 1 small yellow onion, diced
- 1 tablespoon olive oil
- 1/2 teaspoon brown sugar
- 4, 8-inch whole wheat flour tortillas
- 1/2 cup shredded Mexican cheese
- 2 cups shredded cabbage or lettuce
- 1 lime, juiced
- Handful of fresh cilantro, roughly chopped
- 1 cup diced tomatoes

Below is a recipe for the most delicious tlayuda. The recipe is very simple and you can prepare it in no time. Watch the video for a step-by-step preparation. This video will guide you to a delicious meal.
- Preheat the oven to 450°F or the grill to medium-high.
- Bring a pot of water to a boil and pour over the Pasilla de Oaxaca chiles. Drain after 5-8 minutes of steeping. Chop the seeds and membranes out.
- Beans are often cooked in asiento, or unprocessed pork lard, in Oaxaca.
- If using canned beans, heat olive oil in a small skillet over medium-high heat and add onions; cook for about 5 minutes, or until onions are translucent. Cook for 1 minute more to blend flavors after adding the Roasted Minced Garlic and Ground Cumin.
- Add the beans, onion combination, chopped Pasilla de Oaxaca chile, brown sugar, and roughly 3 tablespoons water to a food processor. To get a chunky purée, add just enough saved liquid from the beans to the blender.
- Season the bean mixture with salt and pepper to taste.
- To grill tortillas, place them on a baking sheet or aluminum foil. Use two baking sheets and do not overlap tortillas.
- Spread the bean mixture and Mexican cheese on tortillas, then bake for 4 minutes in the oven or on the grill, or until the edges of the tortillas are crisp.
- Remove 1/2 cup lettuce, half of the diced tomatoes, half of the sliced avocado, and 1/4 cup crumbly oaxaca cheese from the oven and top with 1/2 cup lettuce, half of the diced tomatoes, half of the sliced avocado, and 1/4 cup crumbly oaxaca cheese.
- To make the slaw topping, combine the cabbage, lime juice, and cilantro. Bake for a further 3-5 minutes, or until the toppings are bubbling and the tortilla is crisp around the edges.
- Serve with slaw and diced tomatoes in a triangle shape.
Tlayudas can be served open-faced or folded in half, just like pizza. It can also be folded in half and topped with chepiche, a fragrant herb indigenous to the area. The customary condiments of a red and green salsa, sliced radishes with lime, and pickled onion were served alongside the tlayudas.
