  • 1 mojarra, medium size
  • 1 teaspoon of garlic salt
  • 4cloves garlic
  • lime peel or lemon juice
  • 1 litre of vegetable oil
  • Flour
  • Black pepper
  • 1/2 Tsp Achote paste
  • Onion
  • Curry powder, dried thyme (optional)
  • Fresh Rosemary (optional)

  1. Heat oil in a skillet. Choose a deep skillet to dip the fish.
  2. Open the mojarra, clean and dry it. After washing your fish thoroughly pat down with paper towels after to absorb all the water, (you don’t want any water on fish).
  3. Cut the mojarra diagonally, with shallow cuts.
  4. Marinate and season with salt and pepper. Season as desired even with achote paste (optional).
  5. Dip in flour.
  6. Add garlic and lime peel or lemon to skillet with oil.
  7. In a pot or skillet with enough oil burning hot, sauté the mojarra on both sides for about 12 minutes or until until well done.
  8. Place fried mojarra in a sieve and pat-dry with paper towels, napkin or any absorbent paper to remove excess oil.
  9. Serve fried mojarra with delicious baked potatoes with parsley.
  10. To keep oil from splattering, make sure the fish is dry before frying it.
