- lime peel or lemon juice
- 1 litre of vegetable oil
- Black pepper
- 1/2 Tsp Achote paste
- Curry powder, dried thyme (optional)

- Heat oil in a skillet. Choose a deep skillet to dip the fish.
- Open the mojarra, clean and dry it. After washing your fish thoroughly pat down with paper towels after to absorb all the water, (you don’t want any water on fish).
- Cut the mojarra diagonally, with shallow cuts.
- Marinate and season with salt and pepper. Season as desired even with achote paste (optional).
- Dip in flour.
- Add garlic and lime peel or lemon to skillet with oil.
- In a pot or skillet with enough oil burning hot, sauté the mojarra on both sides for about 12 minutes or until until well done.
- Place fried mojarra in a sieve and pat-dry with paper towels, napkin or any absorbent paper to remove excess oil.
- Serve fried mojarra with delicious baked potatoes with parsley.
- To keep oil from splattering, make sure the fish is dry before frying it.
