  • 1 lb ejotes or green beans (cut into 1 inch (2.5cm) bites)
  • 5 medium eggs
  • 1 ½ cup (300 gr) tomatos
  • 1/2 jalapeño
  • 1 medium onion
  • 3 Tbsp (40 gr) olive oil or cooking oil
  • 2-3 hot chilli peppers (optional)
  • ½ tsp ground cumin
  • 1 garlic clove (peeled)
  • Pepper
  • Salt, to taste

  2. Dice the tomatoes, jalapeo, and onion.
  3. Ejoyes or Green beans should be cut in half or an inch to an inch and a half long.
  4. Place the green beans, cleaned and sliced into bite-size pieces, in a saucepan. Add a tablespoon of salt and cover with water. Bring to a boil, then reduce to a low heat and continue to cook for 5 minutes.
  5. Place the green beans in a bowl after draining them. Remove from the equation.
  6. Toss the tomatoes, onion, chili peppers, and peeled garlic clove in a blender. Blend in a cup of water until you have a smooth sauce.
  7. Heat the oil in a medium skillet or saucepan over medium-high heat. Sauté for approximately a minute, until fragrant, with the diced onion and jalapeo.
  8. Toss in the tomato sauce and season to taste with cumin, salt, and pepper. Allow the sauce to boil for 5 minutes on a low heat setting.
  9. Add the green beans, toss to combine, and cook for 3 minutes.
  10. In a large mixing bowl, combine the green beans, scrambled egg, and whisked egg. Allow to simmer for half a minute before mixing.
