Cueritos is a pig skin dish that is popular in Mexican, Venezuelan, and Spanish cuisines. Pork rind is the culinary term for the skin of a pig. It can be used in many different ways.
Cueritos are thin strips of uncooked pig skin seasoned with regional tastes and pickled in vinegar. Beans, tostadas, and tacos can all benefit from these.
Cueritos are a sort of cemita that can also be utilized in other recipes such as tostadas. Cueritos are sometimes served in a glass with a slaw of cabbage, cucumber, lime, and chile sauce, as well as slices of pickled pork rind.
Cueritos is also featured in “tostilocos,” a popular Mexican street snack in which nacho-flavored tostito chips are topped with cucumber, cueritos, lime juice, Valentina spicy sauce, chamoy, tajn spice, chili powder, salt, and Japanese peanuts before being coated in a crunchy brown flour shell.
Cueritos are distinguished from chicharrón, which is fried pork skin, by pickling. In Spain, a chicharrón is a rind with fat clinging, while a cuerito is a rind without fat. On the other hand, chicharrón is pig skin that has been fried to a crisp, similar to cracklings, in the southern regions of Mexico, while cueritos is soft, deep fat fried pig skin that has been diced and used for tacos.
In carnitas, which are deep fat fried pig parts sold for tacos, natural, uncured cueritos, usually the thick pig skin without the fat attached, are invariably paired with “macisa,” solid or thick flesh. The tacos come with a choice of chopped meats, 1 or 2 soft corn tortillas, chopped cilantro and onion, and a fiery chili sauce of your choice. They are a popular street meal that can be found in most public markets, carniceras (meat markets), and restaurants.
Cuerito is pig skin (pork rind) that can be found in Mexican, Venezuelan, and Spanish cuisines. Cuero refers to leather or skin in Spanish, hence cueritos means “small leathers.” Pickled with vinegar, they can also be served with a spicy sauce. Pineapple, dulce macho (piloncillo), cloves, peppercorns, chile de árbol, and oregano can all be used to season the vinegar.
