- 60 grams white sugar (some prefer brown sugar
- 1/2 tsp of Citric acid (optional)
- Lemon juice
- 1/2 tsp of Citric acid (optional)
- Water (Mineral water or soda can be use as well for calpis)

It’s best to serve this dish soon after making it or the chips will become soft and mushy (although, it’s still delicious either way).

- Combine the yoghurt, lemon juice, and sugar in a large mixing bowl.
- Using a fine strainer, sieve the mixture.
- Refrigerate it in an airtight container.
- Pour 1/4 cup of the yoghurt mixture into a glass to make the Calpis Japanese drink.
- Mix in 3/4 cup mineral water well.
- To drink, dilute it with 4-5 times the amount of liquid to concentrate, such as water, soda water, or milk.
- Serve with mint leaves and fruit of your choice.
- You can add citric acid if you want. It keeps for a long time, making it useful to have on hand when you don’t have any lemons.
- Simply make the concentration with fresh yogurt and store it in the refrigerator for up to 10 days.
- Enjoy your calpico (Japanese calpis drink)
Because the concentrate is quick to make, I recommend making a batch that you can use up in a week.
With brown sugar and thin yoghurt, it’s even better! We’ve tested it with plain whole milk yogurt as well as vanilla yogurt (with this we left out the sugar.) We prefer it to be more “tart,” so we cut back on the sugar. We also prefer to use freshly squeezed lemon juice.
